Recipe: Hamburger Soup
This is a soup recipe an old roommate gave to me. I’m currently making this in preparation for the $0 Challenge. It’s easy to make, delicious, and hearty so I thought I’d share it with everyone.
Hamburger Soup
Ingredients
- 1.5 pounds (0.8kg) lean ground beef
- 1 medium onion, chopped
- 1 28oz can diced tomatoes
- 2 cups water
- 3 cans consommé (aka chicken broth)
- 1 can tomato soup
- 4 carrots, chopped
- 3 celery sticks, chopped
- 1 bay leaf
- 1/2 tsp. thyme
- 8 tsp. pot barley
Directions
1. Mix beef and onion in large pot and cook until brown.
2. Drain liquid.
3. Add all other ingredients.
4. Simmer at least 2 hours, remove bay leaves and enjoy!
Note: I tend to add in a lot more pot barley than this recipe calls for as it helps to fill you up. Add in as much as you want but just keep in mind that it will expand as this soup cooks and take up a lot more volume than when dry.
Servings: This makes approx. 6 servings.

Chili also works. In the winter I slow cook a 7 hr chilli, generous in veggies, pre pack and freeze lunch sized portions. Just go light on the beans and rinse them before adding so your co workers will be happy. :)
